I have a Rudder question what is the most degree a rudder can turn to port/starberd, is there a point where the rudder stops working or to less affect 90 degrees with a propeller jeting water at it?

Depends upon what you want. I have seen boats that close off (twin rudders) to the point that the thrust bouncing off of the blockage make the boat go in reverse.

No rules on max rudder movement. I wouldn't make a single rudder boat turn the rudder past 90 deg, but depending on your setup that can work on dual rudder boats like warspiteIRC mentioned.

I'd suggest setting it up to get as much rotation out of your rudder as you can and then fine tune how much you actually want with the endpoint adjustments on your radio.
